鲜牛蹄筋250克
辅料:
酱油15克,料酒10克,盐3克,味精2克,白糖5克,鸡汤200克,淀粉2克,葱30克,油50克
特色:
咸香味浓,色泽金红。
做法:
1)将蹄筋切成长5厘米、宽厚约1厘米的条;
2)将蹄筋放入开水中烫一下取出;
3)炒锅上火,加油50克;
4)将葱段放入煸炒,至出香味且葱略变为金黄色时;
5)加入蹄筋,迅速翻炒,使蹄筋均匀受热;
6)加入酱油、料酒、盐、味精、白糖、鸡汤;
7)开锅后,转用小火烧维10分钟;
8)再用大火加热,最后用淀粉勾芡。

原料:
鲜猪蹄筋250克
辅料:
冬茹6克,玉兰片、火腿各50克,酱油、料酒、葱、淀粉各13克,姜8克,盐、味精各3克,汤250克。
特点:
味鲜美,入口糯,色红亮。

1.将生蹄筋用水煮烂,而后捞出用凉水冲漂去胶汁,切成两段。葱剖成两半切断,姜切片。冬茹用水发透去腿,玉兰片用开水氽透后均洗净切成条形,火腿切成条片。
2.用炒勺将油烧热后,先下葱、姜,再下冬茹、玉兰片煽炒,而后再下酱油、蹄筋、火腿、盐、料酒、汤,汤开后撇去浮沫用中火炖至入味时加味精,用湿淀粉勾芡,浇明油少许即成 。

鲜朝天椒三、四个、香葱半两、白糖一大匙、老抽三大匙、料酒两大匙、盐、味精适量。
做法:
1、蹄筋切稍小块;葱切段;辣椒切圈。
2、将蹄筋下沸水锅中焯半分钟,捞出沥干水分。
3、炒锅中放油烧至六成热,下葱爆出香味,再下蹄筋。
4、稍稍翻炒后放料酒、老抽。
5、炒约半分钟后加约一斤汤或水、盐、白糖、辣椒,烧沸后加盖改小火烧约半小时。
6、待蹄筋软糯时改大火收干汤汁,放入味精。
7、铲匀后起锅装盘即可上桌。
