孙大文,男,出生于中国广东省潮州市,食品科学家,欧洲人文和自然科学院院士[1]爱尔兰皇家科学院院士[2]、国际食品科学院院士[3]、国际农业与生物系统工程科学院院士[4]、爱尔兰国立都柏林大学终身教授

1978年孙大文考入华南工学院,先后获得学士、硕士博士学位;1988年博士毕业后留校任教;1989年开始分别在德国斯图加特大学、英国贝尔法斯特女王大学、纽卡斯尔大学和谢菲尔德大学任职;1995年受聘于爱尔兰国立都柏林大学,先后担任讲师、高级讲师、副教授、教授;2004年被英国皇家机械工程师学会授予食品工程师年度人物大奖;2010年当选为爱尔兰皇家科学院院士;2011年增选为欧洲人文和自然科学院院士;2012年当选为国际食品科学院院士;2013年3月获得影响世界华人大奖[5],5月获得国际食品保护协会冷冻研究奖;2016年被授予国际农业与生物系统工程委员会荣誉主席[6]

1995年起,受聘于爱尔兰国立都柏林大学(UCD),成为在爱尔兰第一个获得永久教职的华人,并且以最短的时间从讲师晋升为高级讲师、副教授和正教授。当前,孙大文博士是爱尔兰都柏林大学食品和生物系统工程教授,领导着食品冷冻及计算机化食品技术研究团队,是爱尔兰有史以来的第一位华人终身教授。

科研成就

研究方向:新兴食品加工技术;食品干燥、冷却、冷冻、冷藏技术;果蔬储藏与保鲜技术;食品加工过程的模拟,优化和控制;食品检测的计算机视觉技术

他的主要研究包括制冷、冷冻及干燥过程和系统、食品质量与安全、生物过程模拟和优化以及计算机视觉识别技术等。尤其值得指出的是,他在真空冷却熟肉制品、计算机视觉检测比萨饼质量、采用可食用膜技术实现果蔬货价期延长等方面具有世界领先的开创性成就,得到了国内外媒体的广泛报导。他在世界上著名杂志和国际会议上发表了900多篇高水平论文,出版专著15部,其中超过500篇论文被SCI收录(H指数81)。

超快速食品冷却技术

首次采用了冷却机理完全不同的真空冷却方法,实验结果证明真空冷却对熟肉制品及即食食品都具有极其明显的超快速效果,获得了突破性成果。例如,采用该技术可以将熟肉制品(5至7公斤)在约一个半小时内从72度冷却到4度,在大幅度增加生产效率的同时极大地提高了产品的质量和安全性,而使用常规的工业界冷却方法一般需要15个小时。该研究一直处于世界领先地位,得到国际同行及西方食品工业界的密切关注。

食品快速质量检测计算机视觉系统

计算机视觉系统对比萨饼及其它食品的快速质量检测的系列研究开创了对食品特别是复杂的比萨饼的生产质量和属性进行自动检测的应用先例。该系统以计算机的自动化和高速处理代替了以往人工的方法,促使食品的生产和检测跟上了现代高科技的发展。

食品涂膜保鲜

首次研究出一种全新的用大豆蛋白等研制成无色无味和透明的可食用涂膜溶液,对水果和蔬菜进行涂膜保鲜,可明显延长产品的货架期。这种包装膜无色无味和透明并且可食用,不会对产品外观及质量产生任何影响,使用方法也相当简便,只需要将果蔬产品在包装溶液中泡浸一下即可完成,为当前食品包装技术向高效率高环保的方向发展奠定了坚实的基础。这一技术经《新科学家》杂志报道后,再次引起了工业界的高度重视,被视为食品包装技术的革命。

2010年,他当选为代表爱尔兰国家最高学术荣誉和成就巅峰的的爱尔兰皇家科学院(Royal Irish Academy)院士。时任中共中央政治局委员、中央书记处书记、中央组织部部长现任中华人民共和国副主席李源潮同志特委托中组部发去贺信表示祝贺,盛赞孙大文"为中华儿女争了光,""为推动中国食品技术的发展,培养年轻人才,付出了大量心血,做出了重要贡献。"同年,他又当选为国际农业工程委员会即任主席,任期从2011年元月开始,并于2013年起接任主席,他成为国际农业工程委员会成立82年以来的首位华人主席。 2011年,他再获殊荣,被光荣增选为欧洲人文和自然科学院(Academia Europaea)院士,成为首次当选该院院士的欧洲华人科学家,同时也成为欧洲历史上首位拥有两院院士的华人。2012年,他又当选为国际食品科学院(IAFoST)院士,为全球共增选的22名院士中唯一来自爱尔兰的学者。2016年12月,他当选为国际农业与生物系统工程科学院(iAABE)首任院长,成为iAABE的创院院长,同时也成为iAABE现有33名院士之一。

根据汤森路透集团出版发行的基本科学指标(Essential Science Indicators)数据库有关全球农业科学家排名,在汇集和分析过去十年Web of Science所收录SCI论文系统的数据统计,全球共有四千多名科学家排名进入农业科学专业领域前1%的"被引用次数最多的科学家"(Most Cited Scientists),其中孙大文多年来一直名列前茅,位列第26名(2015.1),按"高被引论文(HIGHLYCITEDPAPERS)"排名,全球排名第一(2015.8)。
