==制作方法==
(1)将笋鸡从脊背部开膛去内脏,清水洗净,再在胸脯肉上扎些小眼,腿部深划一刀。葱、姜多数切片,少数切末。把洗净处理好的鸡用盐、酱油料酒和胡椒粉、葱、姜片腌一下入味。
 
(2)把腌好的鸡放入烧到7成熟的油锅中炸透捞出剁成块,盛入盘中,然后再烧上用葱、姜末、糖、醋、味精、酱油对好的汁(勿太甜、过酸)即在。
