===制作方法===
1.虾仁剔除沙线后裹一层薄鸡蛋清,水发海参也如法炮制(最好用手抓揉几遍),海参用毛汤出水,洗净改成蝴蝶片,竹笋取最嫩的部分切成薄片,用开水焯一下去除涩感。
2.起锅烧温油放入姜丝煸炒,倒入虾仁炒熟捞出。
3.重起锅烧油将葱、姜用小火煸出香味,冲入汤,稍煮片刻,捞除葱姜,下入鸡片、海参、冬笋、泡辣椒、葱、姜、蒜,加入糖、盐、料酒、味精,尝好味,汁开后用水淀粉勾芡,淋上鸡油,装在汤碗中。
放入葱段煸炒,然后加入海参翻炒,再加入虾仁、盐、料酒、胡椒粉、水烧炖。
4.烧炖的同时另起锅烧油,把切成小块的米饭放入锅中炸成金黄色捞出,或将锅巴掰成小块、,放入8成热的油中炸膨松呈牙黄色。
5.把稀薄的水淀粉倒入还在烧炖的锅中稍微收一下汁,然后倒在炸好的锅巴上。
