是广东省客家地区的一种传统特色名菜,属于粤菜系-客家菜。其制法独特,味道鲜美,主要由油豆腐、荸荠和豌豆苗制作而成。
绞肉拌入精盐、酱油、淀粉拌匀待用;油豆腐用开水略泡软,用清水洗净挤去水分,挖一个洞塞入绞肉,都镶好待用;将油加热,放入镶绞肉的油豆腐及酱油、糖、胡椒粉、水,盖上锅盖,用小火煮透到汁干时,淋上香油即可。
