1.鲩鱼洗净,用刀从鱼头顺脊骨一直片至鱼尾,开成两扇要相连不断。再用刀片去鱼大骨。洗净后,鱼肉刻交叉十字花刀,用绍酒、盐、葱、姜,在鱼身上抹匀,腌制15分钟后,将葱姜摘净,再拍上干淀粉待用。
2.瓜英、锦菜、红姜、白姜、酸荞头分别切粒。
3.炒锅坐油,烧至七成热,下鲩鱼(鱼皮朝下),待鱼浮起时,改用中小火,浸约8—10分钟,鱼身挺直变脆时捞出,摆在鱼盘中。
4.炸鱼的同时,另坐一锅,落底油,下番茄酱,偏出红油,落五柳料、料头、绍酒、二汤、盐、糖、米醋、喼汁、麻油、胡椒粉、味精,煮开后,勾玻璃芡,加入炸鱼的热油30克推匀,浇在鱼身上即成。

1.选料要新鲜,剞刀不可太浅,可避免鱼体卷曲。
