後來,三杯演變為客家菜常見的料理,而且亦流行於江西、台灣及廣東。另外,此菜必須要有九層塔、薑和蒜頭才有風味。葷食用雞,素食則用菇代替,可用[[猴頭菇]]、[[杏鮑菇]]及[[冬菇]],油亮的色澤,加上香氣撲鼻九層塔,是下飯的家常便菜。
